Santa Cake

Tis the season~ I got to decorated my holiday cake! 
I have been thinking about this santa inspired cake for a couple weeks now! I was so very excited to finally create it!
Santa's outfit was my theme~ 
I Decorated this cake with Santa Pants, Santa's jacket and his famous hat!
It's going to be snowing on Christmas so I threw some snow on santa... There's no way Santa can do all his work without getting snow on his clothes!

Pumpkin frozen yogurt


I love fall and I love fall food! Pumpkin is one of my favorite ingredients of fall and I love frozen yogurt so much I think it has become my hobby! Lucky me I had all this in my pantry so I could play around and come up with this tasty fall fro-yo! 


Homemade Pumpkin frozen Yogurt

  •  1 cup vanilla non-fat Greek yogurt
  • 1 cup pumpkin puree
  • 2 tablespoons real grade A maple syrup
  • 1 teaspoon pumpkin pie spice or 1/2 tsp of cinnamon and a pinch of nutmeg, clove ginger
  • 1/4 cup chocolate chips

Mix everything together except oreos in a large mixing bowl or heavy duty blender ( I use my ninja) until completely combined.Then Fold in oreo chunks.
Place the mixture in an ice cream maker and Churn for a few minutes until it is a smooth, cool consistency.
 Alternatively, place in a freezer safe bowl and put in the freezer and stir mixture every half hour until it reaches desired consistency.

Banana Bread~ using Coconut and Almond Flour~ Drizzled with nutty sauce


I have been craving banana bread but I wanted a lighter version then I have been making for years.  I took my moms heavy hearty buttery version and my favorite nutty whole wheat version and came up this light fluffy (from the coconut flour) , hearty (from the almond flour), and nutty (from the delicious nutty sauce) Banana bread! It is Low fat, Low carb and so yummy! Happy Baking!


Banana bread recipe~


Preheat oven to 350 degrees 

Bread Ingredients:

  • 3/4 cup organic almond flour
  • 1/4 cup  organic coconut flour
  • 3/4 teaspoon of baking soda
  • 1/2 teaspoon sea salt
  • 2 tablespoons melted extra virgin coconut oil
  • 3 free range organic eggs
  •  1 cup organic mashed banana~ about 2 bananas
  • 1/4 cup of grade A real maple syrup or honey
  • 1/2 cup of chopped raw walnuts, (optional)

Nutty Sauce ingredients:

  • 1 tablespoon ground raw almonds (or almond butter)
  • 1 table spoon ground raw peanuts (or organic pb)
  • 1 tablespoon coarsely chopped raw walnuts
  • 3 tablespoons raw milk, almond milk or coconut milk


How To:

  1. Using a whisk, blend all the dry ingredients together.
  2. Add the wet ingredients together, blend well, and then mix them into the dry ingredients. Until the batter is well blended.
  3. line the pan with parchment paper. Add the batter to a baking dish
  4.  Bake @ 350 for 40-45 minutes, or until browned and a toothpick inserted in the middle of the bread comes out clean.
  5. DRIZZEL the nutty sauce all over the top of the bread! Yummmy

Mookie ~Oatmeal Muffin Cookie~ with a Healthy Twist!



Mookie~ With a Healthy Twist 

The best baked good ever! Its not a muffin... not a cookie... it's a muffin cookie! Moist on the in side and crunchy on the outside!!! 

Mookie~

preheat oven 350*
prep time: 10 min
bake time: 20-25 min

Recipe
  • 1/2 cup organic extra virgin coconut oil (room temp)
  • 1/2 cup pureed sweet potato or pumpkin  
  • 1 1/2 cups organic maple sugar or coconut crystals
  • 2 large organic eggs
  • 1 tsp organic vanilla or maple extract
  • 3 cups organic rolled oats
  • 1 cup unrefined whole wheat pastry flour
  • 1 tsp sea salt
  • 1/2 tsp baking powder ( non- aluminium base!)
  • 1/2 c. organi dried shredded coconut
  • 1/2 c. organic raisins or and dried fruit of your choice 
  • 1 c. organic walnuts (optional)


Mix coconut oil, puree and sugar until thoroughly blended, add eggs and vanilla- beat well.

In separate bowl combine oats, flour, salt, and baking powder.

Blend oat mixture with butter mixture on low until thoroughly combined. 

Fold in coconut, raisins and walnuts.

Pack cookie dough into an ice cream scoop or a 1/3 measuring cup and empty onto lightly greased baking sheets~ spacing about 2-3 inches apart. 

Bake @ 350 until cookie edges are golden brown. (about 20 min)

  • 1/2 c. raisins
