Santa Cake

Tis the season~ I got to decorated my holiday cake! 
I have been thinking about this santa inspired cake for a couple weeks now! I was so very excited to finally create it!
Santa's outfit was my theme~ 
I Decorated this cake with Santa Pants, Santa's jacket and his famous hat!
It's going to be snowing on Christmas so I threw some snow on santa... There's no way Santa can do all his work without getting snow on his clothes!

Pumpkin frozen yogurt


I love fall and I love fall food! Pumpkin is one of my favorite ingredients of fall and I love frozen yogurt so much I think it has become my hobby! Lucky me I had all this in my pantry so I could play around and come up with this tasty fall fro-yo! 


Homemade Pumpkin frozen Yogurt

  •  1 cup vanilla non-fat Greek yogurt
  • 1 cup pumpkin puree
  • 2 tablespoons real grade A maple syrup
  • 1 teaspoon pumpkin pie spice or 1/2 tsp of cinnamon and a pinch of nutmeg, clove ginger
  • 1/4 cup chocolate chips

Mix everything together except oreos in a large mixing bowl or heavy duty blender ( I use my ninja) until completely combined.Then Fold in oreo chunks.
Place the mixture in an ice cream maker and Churn for a few minutes until it is a smooth, cool consistency.
 Alternatively, place in a freezer safe bowl and put in the freezer and stir mixture every half hour until it reaches desired consistency.

Banana Bread~ using Coconut and Almond Flour~ Drizzled with nutty sauce


I have been craving banana bread but I wanted a lighter version then I have been making for years.  I took my moms heavy hearty buttery version and my favorite nutty whole wheat version and came up this light fluffy (from the coconut flour) , hearty (from the almond flour), and nutty (from the delicious nutty sauce) Banana bread! It is Low fat, Low carb and so yummy! Happy Baking!


Banana bread recipe~


Preheat oven to 350 degrees 

Bread Ingredients:

  • 3/4 cup organic almond flour
  • 1/4 cup  organic coconut flour
  • 3/4 teaspoon of baking soda
  • 1/2 teaspoon sea salt
  • 2 tablespoons melted extra virgin coconut oil
  • 3 free range organic eggs
  •  1 cup organic mashed banana~ about 2 bananas
  • 1/4 cup of grade A real maple syrup or honey
  • 1/2 cup of chopped raw walnuts, (optional)

Nutty Sauce ingredients:

  • 1 tablespoon ground raw almonds (or almond butter)
  • 1 table spoon ground raw peanuts (or organic pb)
  • 1 tablespoon coarsely chopped raw walnuts
  • 3 tablespoons raw milk, almond milk or coconut milk


How To:

  1. Using a whisk, blend all the dry ingredients together.
  2. Add the wet ingredients together, blend well, and then mix them into the dry ingredients. Until the batter is well blended.
  3. line the pan with parchment paper. Add the batter to a baking dish
  4.  Bake @ 350 for 40-45 minutes, or until browned and a toothpick inserted in the middle of the bread comes out clean.
  5. DRIZZEL the nutty sauce all over the top of the bread! Yummmy

Mookie ~Oatmeal Muffin Cookie~ with a Healthy Twist!



Mookie~ With a Healthy Twist 

The best baked good ever! Its not a muffin... not a cookie... it's a muffin cookie! Moist on the in side and crunchy on the outside!!! 

Mookie~

preheat oven 350*
prep time: 10 min
bake time: 20-25 min

Recipe
  • 1/2 cup organic extra virgin coconut oil (room temp)
  • 1/2 cup pureed sweet potato or pumpkin  
  • 1 1/2 cups organic maple sugar or coconut crystals
  • 2 large organic eggs
  • 1 tsp organic vanilla or maple extract
  • 3 cups organic rolled oats
  • 1 cup unrefined whole wheat pastry flour
  • 1 tsp sea salt
  • 1/2 tsp baking powder ( non- aluminium base!)
  • 1/2 c. organi dried shredded coconut
  • 1/2 c. organic raisins or and dried fruit of your choice 
  • 1 c. organic walnuts (optional)


Mix coconut oil, puree and sugar until thoroughly blended, add eggs and vanilla- beat well.

In separate bowl combine oats, flour, salt, and baking powder.

Blend oat mixture with butter mixture on low until thoroughly combined. 

Fold in coconut, raisins and walnuts.

Pack cookie dough into an ice cream scoop or a 1/3 measuring cup and empty onto lightly greased baking sheets~ spacing about 2-3 inches apart. 

Bake @ 350 until cookie edges are golden brown. (about 20 min)

Modern Buttercream Wedding Cake

This is a cake I made for a Rustic + modern wedding. I made a Sour Cream Vanilla Cake with two layers of chocolate ganache and a layer of white chocolate whipped ganache stuffed with fresh raspberries.  The cake is decorated with modern vanilla buttercream. 

The wedding cake and grooms cake fit perfectly atop the  rustic wood stands~ 
on the dessert table at the reception! 


The stands I made out of a piece of firewood that I hunted down from a wood pile!

Mickey Mouse Cake


This is a Micky Mouse inspired three layer cake that I created for a Birthday Boy turning two! 

He loves Mickey and his party was Mickey Mouse themed! 


The inside of this cake was  cream cheese pound cake with two layers of strawberries and whip cream. Frosted with buttercream and decorated with fondant cutouts:) The mickey hat I molded round and layered it in fondant- the ears I made with fondant as well! SO FUN!

Bridal Shower Cake

~Moist yellow sour cream cake with white chocolate buttercream frosting ~


Topped with white chocolate ganache, raspberries, and sprinkled white chocolate shavings.  Decorated with fondant flowers and a organic yellow coloring decorative buttercream boarder.


Layers of white chocolate curd stuffed with fresh raspberries 
with a layer of chocolate ganache in-between. 





A Big Slice of Cake

This was made for a special lady celebrating with two others. (serves 4) 
This is a yellow sour cream cake with four layers alternating whipped chocolate ganache and chocolate raspberry curd covered in chocolate ganache with a white chocolate drizzle. Decorated with chocolate fondant roses and a pretty bow.


Peace Cake

Chocolate cake stuffed with five layers of raspberries and cream and dark chocolate ganache. 
This cake was made for a special lady who can have zero oil or fat~ So I made her a fat free chocolate cake and used fat free coconut cream! Peace:)

~Yellow cake with Chocolate Ganache and chocolate whipped Frosting~ 
 Healthy style! 
  

Cake

  • 1 cup of raw honey (or other sweetener)
  • 1cup of plain organic greek yogurt 
  • 2 teaspoon of vanilla
  • 1/4 cup + 2 tablespoons coconut oil (melted and cooled)
  • 4 eggs
  • 1/8 tsp salt
  • 2 teaspoon of baking soda
  • 4 cups raw ground almond meal or  blanched almond flour ( raw is more whole grain tasting) 


Preparation

  1. Preheat oven to 310 degrees F.
  2. In a bowl, blend yogurt, eggs, honey, and vanilla together. Next, add melted coconut oil and blend well.
  3. Mix dry ingredients in separate bowl. (flour, baking  soda, and pinch of salt) Next add to the wet mixture, and blend well.
  4. Pour the batter into 2 8x8 oiled baking pans ( Tip: add a circle cut-out of parchment paper to the bottom of the pan so the cake comes out easy and use bake even strip around cake pan so the cake bakes even).
  • Bake for about 35 to 40 minutes, or until the center is not wiggly. The top will be starting to brown and a toothpick will come out clean. Cool completely and then slice the cake into two layers using a sharp, long, carving knife. Set the layers apart and get the bottom layer ready to be layered with whipped coconut frosting and or ganache. (I like four layers, but you could just do 2:) 
*For no oil recipe sub with 1/4 cup yogurt, apple sauce, sweet potato or pumpkin puree) 


Ganache
  • 2  cup of chocolate chips or a bar
  •  1 cup organic can coconut milk or cream of your choice 
  • 2 tsp coconut oil~ optional for sheen 
  • 1 tsp vanilla
Ganache prep: Heat coconut milk on medium- hight heat. Chop chocolate. Take coconut milk off heat just when steam begins to rise off the top and add to chocolate in separate bowl. Let stand 5 min and add oil/ vanilla then stir. Let ganache cool at room temp for at least one hour. For a thicker ganache allow to cool overnight and whisk before using. 


Chocolate whipped frosting
(or just chocolate mousse)
  • 2 can full-fat organic coconut milk
  • 1/2 cup plus 2 tbsp raw cocoa powder
  • 1 tsp pure vanilla extract
  • sweetener to taste (I used a little maple syrup or honey, but any dry sweetener will do stevia or powdered sugar.)
Prep: Open the coconut milk, and  transfer to a bowl. Leave uncovered in the fridge overnight. (Don’t shake the can before opening.) It should get very, very thick. (If it doesn’t, you’ve gotten a bad can that won’t work for the recipe.Thai Kitchen Organic work great! Once thick, transfer thick cream top to a bowl (leave out the watery stuff at the bottom of the bowl) Whip in your cocoa, vanilla, and sweetener with a whisk or beaters, or if you want to be fancy.

White Rose Cake

 I created this cake with the balance in mind~ wanting to have my pretty cake and eat it too! I love ALL CAKE and any excuse to bake! Cake art and eating clean are big in my life so this is what I made for
 My Birthday :) 
 ~Yellow cake with chocolate ganache~ 
Organic healthy on the inside with a pretty decorated outside! 

Made with sprouted ground almond meal, coconut flour, yogurt instead of butter, honey instead of sugar, and only egg whites of course! I filled it with raw chocolate and whipped coconut cream ganache for the layers. 
Covered in white fondant and decorated with buttercream roses! Low carb, low glycemic and low fat. Still moist, rich and delicious too! Yay.

Sunflower Fun Girl Cake
